We are the Doverspike Family. Donald is a fifth generation cattle rancher on his family owned and operated cattle ranch in the high desert country of Eastern Oregon. Katherine comes from multi-generational farming family in California and spends her time keeping up with their three kids, Oliver, Lauren, and Elliot, while trying new recipes to cook for family, friends, and the hard-working cowboy crew.

Our Ranch

Hotchkiss Company is a cow-calf ranching operation that was founded in 1888 in Harney County by Donald’s Great-Great-Grandfather, Hull Hotchkiss. Each generation of Hotchkiss Company has worked hard to maintain the legacy of raising high quality cattle, resulting in superior quality beef. The fourth, fifth, and sixth generations all live on or near the family ranch and are actively involved in the day-to-day ranching and farming operations.

Our Cattle

Our cattle are all born and raised on the family ranch. Cows calve in the spring and spend the summer on pasture up in the higher elevations where they graze on natural grasses with their calves. In the late fall, the cattle come home and spend the winter in our meadows eating ranch-raised alfalfa and native grasses. As they enter our finishing program, they are fed a mixture of forages and grain for optimal flavor and marbling.

Our Beef

We pride ourselves in producing the safest, highest quality beef for our consumers and would not sell a product that we wouldn’t feed to our own family. Doverspike Beef is grass-fed and grain-finished, all-natural, never treated with hormones or antibiotics, and is dry-aged for a minimum of 21 days for superior flavor and tenderness in every bite. Our beef is processed and inspected at a USDA facility so that you can be assured it is safe, wholesome, and properly labeled. We believe in providing only the best beef from our ranch to your table!
